Fried Egg in an Avocado

Egg in a hole with a twist. Healthy deliciousness full of energy and protein.
Cut the avocado in half, lengthwise. Remove the seed.
Be sure to add your own spice to this recipe. This time I added tomato and feta cheese.
Cut a tiny portion off each side of the avocado so it will lay flat on both sides. Continue to cut the two holes from the avocado seed so they go completely through. You will end up with 2 pieces about 1" thick. If the hole from the avocado seed is smaller than the egg yoke, increase the diameter of the hole to allow enough room for the egg. Leave the skin in tact.
Heat a small frying pan to medium/high and drizzle with olive oil.
Place the avocado slice, with the skin on, in the pan.
Crack an egg, leaving the yoke in the middle of the avocado’s hole. Allow the egg to cook 2 minutes. Flip the egg/avocado creation, and cook to desired consistency. Repeat steps for each egg.

Remove from heat and serve. Remove the skin of the avocado as you eat.
